If there’s one recipe that works perfectly this time of the year, it’s Taylor Swift’s chai cookies. But even though there have passed quite a few years since Taylor posted the recipe on her Tumblr account I haven’t seen any vegan alternative for the recipe yet, so I though I’d try to adapt it and this is what I ended up with:
Instructions:
- Using a mixer beat the margarine, then add the vegetable oil, granulated sugar, powdered sugar and vanilla until they’re completely incorporated;
- Cut one chai tea packet and pour the tea leaves into the batter, then stir in the flour, baking soda and salt;
- Refrigerate the dough for 1 hour/freeze for 15 minutes;
- Preheat the oven to 180 degrees Celsius (350 Fahrenheit) then line baking sheets with parchment paper and grease with cooking spay;
- Take the dough out of the fridge/freezer and scoop 1 tablespoon on to the baking sheet, then press it evenly so it has a thickness of about 0.6 cm or 1/4 inch, make sure to leave about 2 cm or 2 inches in between the cookies;
- Bake the cookies for 8 to 10 minutes then let them cool;
- While the cookies are baking, you can make the eggnog icing by mixing your coconut milk, cinnamon, nutmeg and maple syrup (or store bought vegan eggnog) with the powdered sugar;
- Once the cookies have cooled, add the icing and sprinkle some cinnamon on top and you’re done!
